Balsamic Strawberry Ricotta Toast

I had a basketful of the most beautiful, scrumptious, sweetest, tiniest strawberries sitting in my fridge. I also had balsamic vinegar sitting in the cupboard. So I did the math and that obviously equals… infinite delicious possibilities.

And out of infinite possibilities I went with toast, because you know, you don’t need to be adventures all the time and there’s beauty in simple (boring?) things.

Let me start by saying if you’ve never tried soaking your berries in balsamic vinegar, then I’m here to tell you that you should start doing that. Balsamic vinegar is a beautiful Italian gift to humanity and they’ll bring out the berries wonderful colour and enhance their flavour. Its heaven. Therefore a toast can be more than just a toast, it can be a beautiful and flavourful experience.

This recipe is so straightforward and quick, and you can get creative and play around with the toppings. It’s perfect for breakfast or a quick little snack. All you have to do is combine some sliced strawberries and balsamic vinegar (I just eyeball it) in a bowl. Set aside in room temperature for about 15 minutes. Toast some nice bread and spread ricotta cheese on top (be generous!) – you can also add lemon zest to it, always a good idea. Spoon the berries onto the bread, and voila! You are done. I would also add fresh mint, since it pairs so well with strawberries, but unfortunately I didn’t have any.

They can be a little messy to eat, but just embrace the messiness, it’s not that bad. If you don’t like ricotta, you can try mascarpone or any other type of cream cheese. And that’s the wonderful thing about toasts: you can dress them up however you want and they’ll still probably turn out good.

These, for instance, taste like summer – fresh and delicious.
