Peach Cobbler

When it’s summer and there are fresh, juicy peaches everywhere, I can’t stop myself from trying to make as many peachy dishes as possible. This summer in particular I found this recipe on Bon Appetit and it’s become my favorite. It’s so easy to make and so quick, that I’ve had it both as breakfast and dessert. And as a snack – it’s a very flexible dish. 

You basically only need three ingredients for the biscuits, and they turn out crispy on the outside, doughy and delicious on the inside. I made some small changes to the original recipe: I didn’t have any berries so I only used peaches, and instead of the cinnamon cream (which sounds yummy, by the way) I served it with mascarpone cheese and it worked out great.

I know summer is gone, but I still got a couple of peaches in the fridge.. And I’s always summer somewhere, isn’t it?
