A classic Northeast Italy Aperol Spritz.
Before summer is officially over I need to share this elegant and bright drink with whoever is out there. Whoever is reading this right now, these instructions must be followed immediately: go make a refreshing drink (preferably this one), call up a friend, sit on the porch. Stop for a moment. Feel the breeze on your skin? Wonderful, isn’t it? Remember that not too long from now doing this very simple, very enjoyable activity will not be an option for a very, very long time.
I know, we all can’t wait for pumpkin spiced lattes and eggnog. Christmas and fall and Halloween. I get it. Trust me, I’m looking forward to them as well, but their time will come, and it’s fast approaching, so before the sun starts setting on us at 4 in the afternoon, let’s all sit on the porch and have some damn fresh drink that’s all sparkly and bright and trick us into thinking we’re in Northern Italy. Let’s enjoy our fleeting summer while we can.
Here’s what you’ll need:
- 3 ounces (1 part) Aperol
- 3 ounces (1 part) dry Prosecco
- 1 ounce (a splash) club soda or unflavored sparkling water
- Orange slice, for garnish
Add ice to a wine glass until it is nearly full. Pour in the Aperol. Pour in an equal amount of Prosecco. Top your drink off with a splash of club soda and add a slice of orange. There you go, it tastes like summertime in Italy.
