These are hard times we’re living in, and I’m sending love your way! The kitchen to me has always been a place of joy and union, be it good times or hard times. In a house full of people, you can find everyone gravitating towards the kitchen, where there’s always something delicious being cooked, loud conversations around the table, kids running around, and an irresistible smell invading the other rooms.
Whether you’re spending more time cooking these days, or just looking for something quick and easy, this pasta is both satisfying, fresh, and a perfect dinner that you can get done in last than 30 minutes, using mostly kitchen staples. I find angel hair pasta the best kind for this dish. Its delicate texture goes really well with the olive oil and parmesan, but you can use spaghetti or linguini, or any pasta of your choice. Here’s what you’ll need:
Garlic, 2 cloves, thinly sliced
Olive Oil, about 4 tbsp
Chilli pepper flakes
Angel hair pasta
Boil the pasta according to package instructions. In the meantime, sauté garlic in olive oil and break in an egg. Sprinkle the entire pan with chilli pepper flakes, sea salt and oregano, and cook the egg until semi-set, coating it with the garlic-infused oil. Remove the egg to a separate plate and then toss your pasta in the pan. Plate up your pasta with the egg on top, sprinkle liberally with parmesan cheese and chives or fresh cilantro.
