Super Easy Raspberry Chia Jam

Here are the magic words that describe this jam: no cooking required.

It’s so ridiculously easy and simple to make, you can do it all in one bowl and prepping doesn’t take more than five minutes. The result is a super healthy jam loaded with fiber and omega-3. You can have it on toast with peanut butter, but I’ve been addicted to having it on Greek yogurt with some homemade granola and a drizzle of maple syrup. It’s such a classic combo.

I’ve made this jam so many times and to be perfectly honest, I eyeball the ingredients for the most part. It’s a very forgiving recipe and you can adjust it to taste. But here’s basically what you’ll need:

4 cups frozen raspberries

¼ cup chia seeds

2 tablespoons orange juice (or lemon juice)

maple syrup, to taste

  1. In a medium bowl, combine the frozen raspberries, chia seeds and orange juice. Cover and let the mixture defrost for about three hours at room temperature, or overnight in the refrigerator.
  2. Once the berries are defrosted and soft, use a potato masher (or the back of a spoon or a fork) to mash up the mixture to your desired consistency.
  3. Taste, and stir in some maple syrup, to taste. If the chia seeds aren’t plump yet, let the mixture rest for another 30 minutes to let them absorb some more moisture.
  4. Store leftover jam in the refrigerator, covered, for about 1 week.

That’s it! Easy peasy, isn’t it?

Here’s more of basically the same picture in a poor attempt to convince you. Is it working? I hope so!
