An easy Homemade Breakfast Pizza that can be made in less than 30 minutes!
Um..excuse me?? Pizza for breakfast?? Girlfriend, this is the keto age, okay!!
Believe it or not, but – I’ve googled it, so it’s completely trustworthy information ;P – some nutritionists claim pizza is healthier than many types of cereals, so… here’s a healthy breakfast idea for ya!
In all seriousness though, as far as pizzas go, this is a fairly healthy-ish version. It’s so easy to make, no proofing or anything like that. Just a handful of ingredients plus whatever topics you like, and that’s it. I love adding greek yogurt to my dough because it adds so much richness and creaminess. For my toppings I used spinach, bacon, corn, mozzarella, and eggs. But you can add anything you like, obviously. I drizzled a bit of olive oil on the dough before adding my toppings – it also makes it crispier.
They’re super filling, so you can make four smaller ones instead of only two. Now onto the recipe!
Homemade Breakfast Pizza
INGREDIENTS
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup Greek yogurt,
- handful spinach
- 1/2 cup shredded mozzarella cheese
- cherry tomatoes, sliced
- 2 large eggs
- 2 strips cooked cut bacon, chopped
INSTRUCTIONS

Preheat the oven to 450F. Place a silicone liner or parchment paper on a baking sheet.

In a medium bowl combine the flour, baking powder and salt and whisk well.

Add the yogurt and mix with a spatula until well combined, and looks like small crumbles.

On a lightly floured surface, knead the dough a few times until tacky, but not sticky.

Divide into 2 equal balls.

Roll the dough out into thin ovals and place on the prepared baking sheet. Drizzle some olive oil.

Top with spinach, mozzarella and tomatoes, leaving the center open for the egg. Bake for 5 minutes then gently break an egg the center of each dough and add the bacon.

Bake for another 5 to 7 minutes, until the crust is golden and the egg is set. Season with salt and pepper.
