I’m genuinely obsessed with these energy balls. They’re incredibly indulgent and healthy. Just 5 ingredients, 1 food processor, minimal physical work, and that’s it.
I must say I’m a huge fan of the whole bacon-wrapped dates thing, but this might be my new favourite way to eat dates. Quite an improvement, eh?
5-Ingredient Peanut Butter Cup Energy Bites
- 1 cup dates, pitted
- 3 tbsp all-natural peanut butter
- 3 tbsp cocoa powder
- 1 cup walnuts
- 1/2 cup shredded coconut
- Place all of the ingredients into a food processor and blend until a dough begins to form. The mixture should feel a little sticky.
- Roll tablespoonfuls of the mixture into snack-sized balls and roll them in the shredded coconut to coat. Refrigerate for 30 minutes.
- Store them in an airtight container in the refrigerator for up to 5 days.
